This session includes theoretical notions about growing, processing, water, roast, storage and a deep look into the best techniques to apply when extracting espresso, depending on the coffee.


This course object is to analyze and understand the variables that impact on the flavour of coffee, specifically the role of the barista when preparing espresso.


All courses are run by Matteo Pavoni, independent trainer with background from the best UK coffee shops.
